* I don't measure out most of the ingredients, just kinda vibe it out, but gave measurements for ya.
Ingredients
- Penne (amount depends on number of people, but I usually make ¾ of a bag from Tesco/Sainsburys)
- ½ cup virgin olive oil
- ⅔ cup tomato paste (I just use the whole tube if you are in the UK)
- 1 ⅓ cup heavy cream (or double cream for our lovely UK folks)
- 2 tsp red pepper flake (I just vibe this — usually add some and have folks add more to their own)
- A whole bag of basil from Sainsburys (honestly as much as you want, I like a lot of basil)
- ½ cup parmesan
- 6–8 cloves of garlic (could do more or less based on taste)
- 2–4 tbsp of butter (no need to melt ahead of time, obvi)
- ½–1 cup of pasta water (I usually do ½ cup, but depends on how thick you want the sauce and how much pasta you made)
- Black pepper to taste
- Salt to taste
Directions
- Boil water with salt. Make pasta (usually I start the sauce first).
- In a saucepan (make sure it is large enough to eventually hold all ingredients including the pasta), add olive oil over medium heat.
- Mince or dice garlic. Add garlic and tomato paste to olive oil. Let cook for like 8 minutes (I just kinda decide it's done). The tomato paste should darken.
- Add heavy cream and simmer for 5 min. It'll combine, but help it along.
- Add red pepper, basil (chopped), salt, & black pepper.
- Add in parmesan, butter, and pasta water. Heat should still be on but low.
- Toss in pasta and remove from heat. Serve immediately otherwise it kind of coagulates after a bit.
