Perfect for two people with some leftovers. When cooking for 4, simply make a side and this would be fine.
Ingredients
- Sausage (of any kind), about half of a long length
- ½ bag broccoli (or equivalent of fresh)
- 2 carrots
- ½ squash
- ½ zucchini
- ½ onion
- 2 potatoes
- ½ bell peppers
- Mushrooms
- Olive oil
- Salt
- Pepper
- Other seasonings to taste
Directions
- Chop potatoes into smaller pieces. Drizzle with olive oil and cook on a skillet in medium heat, flipping every so often to not burn them. When brown, add some water to the skillet and cover for 5 min or until soft. Drain and set aside.
- Chop all vegetables to about equal size and place in a big bowl. Cut carrots a little smaller than the rest of the vegetables. Chop sausage into similarly sized pieces and add to the bowl. Add cooked potatoes as well.
- Pour on a generous amount of olive oil and toss until evenly coated. Add salt, pepper, and other spices (we use garlic powder, paprika, onion powder, Mrs. Dash's, and some Italian seasoning), and toss again to evenly coat everything.
- Cook in the air fryer for 10 minutes at 390º.
